Complex fluids, which include polymers, colloids, emulsions, foams, defy classical definitions of solid and liquids. There is a fascinating coupling between the flow properties or rheology, and the microscopic structure in these materials. In this course, a multidisciplinary introduction to the structure, mechanical, and rheological properties of complex fluids will be provided. The contents of this class include:
